This morning Jude and I made pancakes for breakfast. Like most four year olds, Jude has his favourite dishes but I try and encourage him to eat a variety of different things. He loves helping me in the kitchen and I love watching him discover new foods.
Recently, I’ve noticed that Jude has become more aware of what he’s eating. (more fussy!) For examples, I’ve always used fresh basil in our pasta sauce and after almost three years of eating it, Jude has started to pick out tiny pieces of basil and push them to the side of his plate. I’ve asked Jude to help me to make some of his favourite meals, in the hope that he might try some new foods. If nothing else, I’m sure that he’ll enjoy making lots of mess!
Here is our recipe for Banana & Blueberry Pancakes. . .
– 1 cup Self Raising Flour
– 1 cup Soya Milk
– 1/2 tsp Baking Powder
– 1 Banana
– 1 Large Handful of Blueberries
– Heat a drop of coconut oil in a small frying pan.
– Whisk the flour, baking powder, milk and banana together in a bowl.
– Next add the blueberries.
– Add a large spoonful of the mixture to the centre of the pan.
– After one minute, flip the pancake over.
– Serve and top with more blueberries and honey.

This campaign aims to get little ones more engaged and more involved in the kitchen. Preparing food can be really fun for children and it’s a brilliant way to get fussy eaters to try some new foods. Next up on our list to make is Jude’s favourite dinner. . . Mac n Cheese!
